Amma’s Malaysian Sambal is a heartfelt tribute to my mother, Siva, whose passion for food has always been about creating moments of togetherness. This signature blend has been refined over time in her kitchen, and it holds a special place in my journey growing up.
Southeast Asia as a whole uses sambal, a traditional chilli sauce that is most popular in Malaysia and Indonesia. You can't have a meal in Malaysia without it, whether it's nasi goreng, mee goreng, kari puffs, chicken satay, or something else. Ours begins with bright lemongrass and ginger notes, followed by rich umami flavours, and ends with a warm, lingering heat from Thai chili peppers. It is a flavour bomb that is as versatile as it is spicy.
