Ingredients
- 3 tomatoes, seeds removed, diced
- 2 ripe avocados, diced
- 1/3 cup red onion, diced
- 400g black beans, rinsed and drained
- 1 1/2 cups sweet corn
- 1 bell pepper, diced
- 1 jalapeño, seeds removed, finely diced
- 1/3 cup cilantro, finely chopped
- 1/2 cup crumbled feta (optional)
- Dressing: 1/3 cup olive oil
- 1/4 cup lime juice (fresh preferred)
- 1/4 cup LITS Burning Mango hot sauce
- 1 tbsp taco seasoning
- 2 tsp cumin powder
- 1/4 tsp garlic powder
- Salt and pepper, to taste
- Tortilla chips, for serving
Instructions
- Combine the base. In a large bowl, mix the tomatoes, avocado, onion, black beans, corn, bell pepper, jalapeño, and cilantro. Toss well.
- Whisk the dressing. In a separate bowl, whisk the olive oil, Burning Mango, lime juice, salt, pepper, garlic powder, taco seasoning, and cumin.
- Dress and toss. Pour the dressing over the salad and stir well to combine.
- Chill and finish. Keep refrigerated. If not serving right away, fold in the feta just before serving. Scoop with tortilla chips.
