Crumbled tofu is a taco filling that earns respect. Cooked down with onion and spices until it caramelizes at the edges, it goes meaty and savoury and holds a tortilla together.

The OG Boodoo salsa is what makes the plate. Fresh tomato, red onion, lime, and four tablespoons of OG Boodoo, left to sit so the flavours meld. Bright, hot, and honest, exactly like the sauce.

Ingredients

  • Crumbled tofu: 1 block extra-firm tofu, crumbled
  • 1 yellow onion, chopped
  • 1/4 cup tomato paste
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tsp cayenne pepper
  • 1 tsp cumin powder
  • Juice of 1/2 lime
  • Salt, to taste, and oil for cooking
  • Spicy salsa: 1 small red onion, finely chopped
  • 1 Roma tomato, deseeded and finely chopped
  • 1 clove garlic, minced
  • Juice of 1 lime
  • Handful of cilantro, chopped
  • 4 tbsp LITS OG Boodoo hot sauce
  • Guacamole: 1 ripe avocado, 3-4 tbsp low-fat sour cream, juice of 1/2 lime, salt and pepper
  • Taco shells or tortillas, plus lettuce, olives, and jalapeños to top

Instructions

  1. Cook the tofu. Heat oil in a pan over medium. Sauté the onion until soft and golden, then add the crumbled tofu and cook 5-7 minutes until lightly browned.
  2. Season. Stir in tomato paste, smoked paprika, garlic powder, cayenne, cumin, and salt. Cook 5-6 minutes until coated and slightly caramelized, then finish with lime juice.
  3. Make the salsa. Combine red onion, tomato, garlic, and cilantro. Add lime juice and OG Boodoo, season with salt, and let sit 10-15 minutes.
  4. Make the guacamole. Mash the avocado with sour cream, lime juice, salt, and pepper until smooth.
  5. Assemble. Warm the tortillas, add a layer of tofu, a spoonful of spicy salsa, and a dollop of guacamole. Top with lettuce, olives, and jalapeños and serve.
